These tasty little creations not only delicious and genius but they tick all of the boxes in terms of flavour, nutrition and creativity. Free range eggs are jam-packed full of Omega 3s, vitamin D, iron and a complete source of protein. Avocado is a wonderful source of mono-unsaturated fats and a great source of biotin for glowing skin and healthy hair.

With this recipe, it’s wise to line your oven tray with baking paper to avoid egg white spillage – I learnt the hard way. Half your avo, remove the stone and scoop out some of the flesh, leaving a rim of avocado inside each cup. Crack an egg into each half season well with salt and pepper and bang into a moderately hot oven for about ten minutes or until the yolk is cooked.
