Mikey’s Soul Soup

This recipe was made for me by a friend and is the result of “I’ve got no food in the house so let’s just throw everything into a pot and see what happens” 

 

Ingredients 

1 Onion 

3 cloves garlic

3 stalks of celery

Any vegetables chopped into bite sized chunks : Sweet potato, pumpkin, leek, carrot, zucchini, eggplant, broccoli

400ml tinned tomatoes

1 litre bone broth or good quality chicken stock

 

 

Fry off onion and garlic in oil. Add vegetables, tinned tomatoes, bone broth and bring to a simmer. Cook until vegetables are tender.

 

Serve with lots of flat leaf parsley, a squeeze of lemon juice, goats cheese and a slice of sourdough
